At its heart, filling bonbons is a balancing act. You’re juggling flavour, texture, and stability all at once: creamy ganache, gooey caramels, crunchy pralines, bright gels. Each one has a job to do, and when they work together, the result is a chocolate that reveals itself in layers rather than all at once. The goal isn’t just sweetness, but rhythm—soft to crisp, rich to sharp, familiar to unexpected, and when someone finishes the bonbon and immediately wants another, you’ve done your job.
